Father's Day Pie (Strawberry Glazed Pie)

Crust: 9-inch (23 cm) single crust
Filling:

3-1/2 | cups (875 mL) | Fresh strawberry halves |
1/2 | cup (125 mL) | Granulated sugar |
2 | Tbsp (30 mL) | Cornstarch |
| pinch | Salt |
6 | Tbsp (90 mL) | Cold water |
2 | pkg (8 oz/250 g each) | Cream cheese, softened |
2 | Tbsp (30 mL) | Orange juice |
Garnish: (optional) Sweetened whipped cream
- For crust, prepare and bake Crisco single crust. Cool completely.
- For filling, set aside 2 cups (500 mL) strawberry halves. Crush remaining 1-1/2 cups (375 mL) strawberries with fork.
- Combine sugar, cornstarch and salt in small saucepan. Add cold water gradually. Stir until smooth. Add crushed strawberries. Cook and stir on medium heat until mixture comes to a boil. Cook and stir 1 minute longer. Remove from heat. Cool by setting pan in bowl of ice water.
- Beat cream cheese at medium speed of electric mixer until flufy. Add orange juice gradually. Beat until smooth. Spread in bottom of baked pie crust. Arrange strawberry halves over cheese layer. Pour cooled strawberry mixture over strawberry halves. Refrigerate. Top each serving with a dollop of whipped cream, if desired.
