1/3 | c. | sugar |
1/3 | c. | flour |
1/3 | c. | butter |
1 | tbsp. | pumpkin pie spice |
Sprinkle raisins in pie shell. Combine eggs, water and syrup in a heavy saucepan. Cook over low heat to a boil. Add lemon rind, cool and pour into pie shell. Make crumbly topping by cutting butter into sugar, flour and spice, then add cookie crumbs. Sprinkle over filling. Bake at 325°F for 30 minutes. Serve with plain or cinnamon (to taste) whipped cream, or both.
