Easy, but still fancy enough to serve company.
1 | Tbsp. | Butter |
1 | Onion | Chopped |
1 | Clove | Garlic, minced |
1 | Cup | chicken broth |
3/4 | Cup | Rice |
1/2 | Cup | White wine |
1/2 | Cup | Parmesan cheese |
Melt butter in a heavy medium skillet over medium heat. Add onion and garlic and cook until translucent, stirring occasionally, for about 8 minutes. Stir in broth, rice and wine. Bring to a boil. Reduce heat to low. Cover and cook until liquid is absorbed, about 20-25 minutes. Mix in parmesan cheese and serve warm.
