1 | cup | long grain rice |
1/2 | cup | chopped onion |
1 | small clove garlic, minced | |
2 | Tbsp. | cooking oil |
2 | cups | water |
1 | large tomato, peeled and chopped | |
1 | tsp. | salt |
Directions:
In a 2 quart saucepan, cook uncooked rice, onion and garlic in hot oil for
5-8 minutes or until rice is golden and onion is tender, stirring occasionally.
Remove from heat. Carefully stir in water, tomato and salt. Return to heat.
Bring to boiling, reduce heat. Cover and simmer 20 minutes or till rice
is tender. Makes 8 servings.
