Southern Rice Casserole

Note: To this modified pilaf dish, you may add mushrooms, toasted almonds or seedless green grapes the last 15 minutes.
1/2 | cup | margarine |
1 | large | onion, chopped |
1 | cup | uncooked rice |
1 | 4-ounce can | sliced mushrooms, with juice |
1 | mushroom can | of water |
1 | can | beef bouillon |
- In skillet, melt margarine. Add onion and rice and brown until dark. Put this mixture in buttered casserole. Add undrained mushrooms and one mushroom can of water and bouillon.
- Cook covered at 400 degrees about 45 minutes until all liquid is absorbed and rice is tender.
Serves 6.
