1 | clove | garlic, minced |
1 | small can | Crushed Pineapple in Juice |
1 | can | Reduced Sodium Chicken Broth (used Swanson's) |
pinch | salt and pepper | |
1 | cup | Long Grain White Rice |
Saute garlic in olive oil for one minute. Add pineapple with juice, broth, salt and pepper and bring to a boil. Add rice, reduce heat to simmer and cover. Simmer for 20 minutes or until all liquid is absorbed. Fluff with a fork and serve.
