Rice Pilaf with Pecans

1 Carrot; cut into thin strips
1 small Onion; chopped
1 tbl. Olive oil
2 1/2 cups Chicken broth
1/2 cup Orange juice
1 1/2 cup Uncooked long grain rice
1/4 cup Golden raisins
1 1/2 teas. Sugar
1/2 teas. Salt
3 tbl. Chopped pecans
Saute onion and carrot about 5 minutes in hot oil.
Add chicken broth, orange juice, rice, raisins, sugar and salt.
Cover, reduce heat, and simmer until liquid is absorbed, about 20 minutes.
Sprinkle with nuts.
Yield: 6 Servings
