Garlic Ginger Coconut Jasmine Rice

raw Lowell Farms Jasmine Rice (white)

Tbl.
Oil
4
cloves
garlic, crushed
1
Tbl.
fresh Ginger, grated
1/4
Cup
Lite Coconut Milk
2 1/2
Cups
water
Salt to taste
In saucepan over medium heat, sauté oil, garlic and ginger briefly. Add rice and stir well. Add Coconut Milk, water and salt. Bring to boil.
Give a quick stir, cover, reduce heat to low. Cook 15 minutes. Remove from heat and let sit covered five minutes more. Fluff with fork and enjoy.
Serves 4.
