3 | cups | Large or Medium Pasta Shells -- (8 oz.) uncooked |
3 | cups | fresh broccoli florets |
1 | cup | coarsely chopped red bell pepper |
3 | tablespoons | margarine or butter |
5 | cloves | garlic, sliced |
1/4 | teaspoon | crushed dried red pepper (optional) |
1/3 | cup | grated Parmesan cheese |
Cook pasta according to package directions; during last 2 minutes of cooking, stir in broccoli and sweet red pepper. Drain pasta and vegetables. In non-stick skillet over medium heat, melt margarine; add garlic and dried red pepper. Cook 1 minute; do not brown. Toss hot pasta and vegetables with garlic mixture; sprinkle with cheese. Salt to taste.
