8 Oz. | Pasta | (fettuchini works well) |
1 | Tsp. | Extra virgin olive oil |
1 | Clove | Garlic, minced |
2 | Cups | Broccoli flowerets |
1/2 | Cup | non-fat broth |
1/4 | Cup | Pine nuts, toasted |
1/2 | Cup | Parmesan cheese, freshly grated |
Freshly ground black pepper |
Place a large pot of water on high heat and bring to a boil. Meanwhile, heat the olive oil in a saucepan over medium heat, add the garlic and cook it, stirring constantly for about 30 seconds. Reduce the heat to low, pour in the stock and let it simmer while you prepare the pasta. Boil the pasta (time will vary depending on your choice of pasta) then add the broccoli about 5 minutes before the pasta is done. Drain pasta and broccoli. Toss with sauce, pine nuts, cheese and pepper.
Serve immediately
