COMMENTS: Another variation of Hoppin' John
2 tbl. Chicken stock |
1 med. Onion; diced |
1 lg Tomato; diced |
1 cup Uncooked brown rice |
2 cup Water |
1 can Black eyed peas, rinsed |
Saute onion in chicken stock in a fry pan sprayed with Pam. Add tomato and cook another 5 minutes. Stir in rice and water. Cook until rice is done. Add beans and heat through.
