Spicy Catsup

1 | gal | Thick tomato juice |
1 | tsp | Cayenne pepper |
2 1/3 | C | Sugar |
1½ | | Onions, put in blender |
1½ | C | Vinegar |
2 | tsp | Celery seed |
1 | tsp | Mustard seed |
1 | tsp | Cinnamon |
1 | tsp | Paprika |
1 | tsp | Mixed pickling spices |
- In a large pot, mix the tomato juice, pepper, sugar and onions. Bring to a full boil and simmer until half of volume remains.
- Meanwhile, in a small pot, mix the remaining ingredients and bring to a boil. Boil for 20 minutes and let stand.
- Strain into tomato juice mixture after it is done.
- Add 1/4 cup salt. Simmer 30 minutes, stirring often.
- Add cornstarch to thicken if needed.
