Pickled Beets

Place beets in a pot. Bring to a boil and boil until soft (test like a potato.) Drain and rinse in cold water. Clean skins off beets. They peel off easily with your hands. Cut and place in sterilized jars. While the beets are cooking boil vinegar, sugar and water for 5 minutes. Pour the vinegar mixture over beets and fill to the top of the jar. Seal.
