1 | cup | oat bran or rolled oats |
1/2 | cup | brown sugar |
3 | Tbsp. | finely snipped candied lemon peel |
1/2 | cup | snipped dried cherries or apples or apricots |
1/3 | cup | chopped almonds or walnuts |
Layer all ingredients in a 1 quart canning jar. Tap jar gently on the counter to settle each layer before adding the next one. Add additional dried fruits or nuts to fill small gaps, if necessary. Makes 1 jar.

Breakfast Oat Muffins
Beat 1/4 cup cooking oil or melted butter, 1 cup milk or vanilla yogurt, and 1 egg in a mixing bowl till combined. Stir in jar contents. Spoon into 12 greased or paper lined muffin cups. Bake in a 400 oven for 20 to 25 minutes or till done. Cool in muffin cups on a wire rack for 5 minutes. Transfer from muffin cups to wire rack. Serve warm. Makes 12.
