Merry Ginger Muffin Mix

finely chopped crystallized Ginger |

- Lightly spoon flour into measuring cup and level off.
In a large bowl, combing all ingredients. Mix well. Store in an airtight
container in a cool dry place.
- For gift giving, measure 2 C of mix (by dipping cup into mix). Put in a
decorative container. Use mix to make Merry Ginger Muffins.

- Makes 8 Cups of mix.

egg, slightly beaten |
- Heat oven to 400 degrees. Line 12 muffin cups with paper baking cups.
In a med. bowl, combine muffin mix, water, oil and egg. Stir just until dry
ingredients are moistened. DO NOT OVER MIX. Divide batter evenly into
paper-lined cups. Bake until golden brown about 25 minutes.
