Lemon, Orange or Lime Curd

Use as a Spread

  • In a small, very heavy saucepan, combine the eggs, sugar, lemon juice, rind and butter.
  • Cook at just below boiling about 15 minutes. (The mixture will thicken when cold.)
  • Let cool, then store covered in the refrigerator.
  • Makes about 1-1/2 cups.

    Lime Curd: Substitute Lime Juice for Lemon.

    Orange Curd: Reduce the Sugar to 3/4 cup. Replace the Lemon Juice with 5 Tbsp. Orange Juice and 3 Tbsp. Lemon Juice. Use orange rind instead of lemon.
