Put all ingredients (except pecans) in a medium saucepan over medium heat. Stir until sugar dissolves. When it comes to a boil, stop stirring. Cook to 242° (firm ball when dropped in cold water). Add a couple of dashes of cinnamon if desired.
Add pecans and stir until well covered with syrup.
Spread on a greased pan to cool.
Note: Use 2 jelly roll pans if you want the nuts separated individually.
