3 | lbs. | Venison, cut into cubes |
3 | slices | Salt Pork |
1/4 | c. | Fat |
1/4 | c. | Hot Water |
1/2 | Tbsp. | Vinegar |
1/2 | c. | Celery |
1 | Carrot, chopped | |
1 | Apple, chopped | |
1/2 | Tbsp. | Lemon Juice |
Salt, Pepper and Flour |
Use less tender cuts of venison...lard venison with salt pork, salt, pepper and flour; sauté in hot fat until well browned, turn frequently Add hot water and vinegar; cover closely and cook until tender -- 2 1/2 hours adding more water as needed. 1/2 hour before meat is done, add remaining ingredients. Cook until vegetables are done. Serve with tart jelly
