A quick one-dish meal that takes advantage of those versatile packages of ramen noodles and seasonings.
1 | tbsp | peanut or vegetable oil |
3/4 | lb. | pork tenderloin or boneless pork chops |
2 | pk 3oz each | pork-flavored ramen noodles |
1-1/2 | C | water |
1 | red bell pepper cut into 3/4" squares | |
1 | C | broccoli flowerets |
4 | medium | green onions, chopped |
1 | tbsp | soy sauce |
Heat oil in 12 inch skillet or wok over medium-high heat.
Cut pork against the grain into thin slices. Add pork to hot oil and stir-fry about 5 minutes or until pork is no longer pink. Break noodle block into four to six pieces. Stir noodles, seasonings from flavor packets, water, bell pepper, broccoli, onions, and soy sauce into pork. Heat to boiling. Boil 3 to 4 minutes, stirring occasionally, until noodles are completely softened.
Serve immediately. Yield: 4 servings.
