Party Bake Pork Chops

Pork chops, lean and 1 inch thick

Onion, sliced thin

Uncooked rice (not instant)

1lb 13oz
Can peeled tomatoes
Salt and pepper to taste
Trim excess fat from chops. Season chops well on both sides with salt and pepper.
Brown on both sides in lightly greased hot skillet.
Top each chop with a slice of onion, 1 tablespoon rice, and cover with whole tomatoes.
Add remaining tomatoes and juice to the skillet.
Season with salt. Cover tightly, simmer over low heat or bake in a foil-covered baking dish in a 350 degree oven for 1 1/2 hours or until tender.
Makes 4 servings
