Pot Roast Meat Loaf

This is so good!
1-1/2 | pounds | ground beef |
1/2 | cup | bread crumbs |
1/4 | cup | meat |
1 | | egg |
1 | tea. | salt |
1/8 | tea. | pepper |
1 | tbl. | onion soup mix

1 | small | onion, chopped fine |
2 | tbl. | shortening |
1-1/2 | cups | boiling water |
8 | small | potatoes |
6 | | carrots, cut lengthwise |
1 | tea. | salt |

At least 30 minutes before cooking combine ground beef, crumbs, milk, egg,
salt and pepper, onion and onion soup mix. Mix well and shape into 2 small
loaves.
- Wrap in wax paper and chill in fridge. Brown loaves in hot shortening
on all sides. Pour boiling water around loaves, slowley.
Cover and cook for 30 minutes. Turn loaves over and place vegetables around
them. Sprinkle with the last teaspoon of salt. Cover and cook slowly until
vegetables are done.
- Remove meat and veggies to a warm platter. Thicken to make a gravy.
