Pork Chops and Sweet Potatoes

Pork Chops are layered with Sweet Potatoes, Apples and Raisins for this dish.

Apples, peeled and quartered |

Sweet Potatoes, peeled and quartered |
- Trim fat from chops; render some in frying pan to coat lightly; discard excess fat. Rub
meat with salt and pepper. Sauté pork until browned on both sides. Remove pork from pan.
- In the same pan, add flour and mix until blended. Gradually stir in water, raisins, and
lemon juice. Simmer 5 minutes.
- Layer half of the apples and potatoes in a greased 2 qt. casserole. Place chops on top.
Layer remaining apples and potatoes over chops and pour sauce over all.
- Cover and bake in a moderate oven (350 degrees) for one hour or until meat is tender.
- Makes 4 servings.
