A Spanish/Cuban recipe
1/2 | C | olive oil |
2 | large | Spanish onions chopped |
2 | green peppers | chopped |
2 | cloves | garlic minced or pressed |
3 | lbs. | ground steak |
1 | 2-lb. can | tomatoes |
1 | small can | tomato sauce (not paste) |
2 | tbsp. | capers |
1 | can | pitted black olives |
15 | whole | green stuffed olives |
1/2 | C | red cooking wine |
Tabasco(optional) |
In the olive oil saute the onions, green peppers, and garlic until golden. Add ground steak and saute until pink disappears. Add the tomatoes and juice and the tomato sauce. Cook about 1 hour. Add capers, olives and 1/2 cup red cooking wine. Cook and stir 5 more minutes. Add salt and tabasco to taste. Eat over white or yellow rice.
