Oven-Barbecued Pork Chops

You might want to tuck vegetables such as peeled carrots or thick slices of sweet potatoes between these chops to bake along with them.

4		loin pork chops, cut 1 1/2 inches thick
		Salt and Pepper
4		slices lemon, 1/4 inch thick
4		center slices from a large onion, 1/4 inch thick
1/2	c.	Brown Sugar, firmly packed
3/4	c.	Catsup

• Brown chops in a frying pan, arrange in a 9 inch square baking dish or casserole and season with salt and pepper.
• Top each chop with a slice of lemon and a slice of onion.
• Mix together brown sugar and catsup and pour over the meat-be sure the top of each piece is coated with sauce.
• Cover and bake in a moderately slow oven (325 degrees) for one hour, basting occasionally.
• Remove cover and bake for an additional 30 minutes, basting frequently.
• Makes 4 servings.
