This recipe is from a Randy Rigg. He used to post 3 recipes a day on a Fido Net cooking conference. He is in Indiana and has many easy meals with simple ingredients.
1 | can | Cream of Mushroom Soup |
1 | lb. | Ground Beef |
1/4 | C. | onion, chopped |
1 | egg, beaten | |
1/4 | C. | fine dry Bread Crumbs |
2 | Tbsp. | Parsley, chopped |
1/2 | tsp. | Salt |
2 | C. | Mashed Potatoes |
3/4 | C. | Shredded Cheddar Cheese |
3/4 | C. | Sour Cream |
3 | Green Onions, minced |
Mix 1/2 of the soup, ground beef, onion, egg, bread crumbs, parsley, and salt. Press firmly in a 9" pie plate. Bake for 25 minutes at 350 degrees, then spoon off the fat. Mix the potatoes with the sour cream and chopped green onions and frost the meat with the potato mixture. Place the remaining soup on top of the potatoes and sprinkle with the cheese. Return to the oven for about 15 minutes.
