Mustard-Crusted Pork Roast
From the Kitchen of: Pepper

2 | pound | pork loin roast |
2 | tablespoons | spicy mustard |
1 | cup | garlic croutons, crushed |
| | salt to taste |
| | pepper to taste |
1 | | bay leaf |
- Heat oven to 400 degrees F.
- Season roast with salt and pepper, place in shallow pan, add bay leaf
and roast for 30 minutes; remove from oven, spread surface with mustard
and sprinkle with crouton crumbs.
- Return to oven and continue to roast fro 10-15 minutes longer, until
meat thermometer registers 155 degrees F. (remove bay leaf before serving)
- Serves:4-6 with leftover
- Tip: Place croutons in plastic bag, roll with rolling pin until crushed.
