Moose Heart Stew

1 | stalk | celery |
1 | large | green pepper |
2 | large | onions |
1 | C | mushrooms |
2 | large | tins tomato sauce |
1 | tin | whole tomatoes |
| salt and pepper | to taste |

Trim off all sinew and fat from the heart. Parboil for 2 hours or until tender. Cut into 1/2" cubes.Brown in bacon fat in large pan. Dice celery, mushrooms and onions. Fry stirring continuously until onions become transparent - not brown. Next, add the tomatoes and sauce. Simmer until meat and vegetables are tender. If the stew is too thick, add tomato juice.
