Using a large-size muffin tin, fill the muffin tin with the meat loaf mix, molding each one with an ice cream scoop to give it a muffin shape.
Bake in a preheated oven at 350F for approximately 35 to 45 minutes or until the temperature reaches 160F using a meat thermometer. During the last ten minutes of cooking, brush the tops with barbecue sauce to help create a delicious-looking glaze.
