Max's Roast Lamb with Fig Sauce

It's not as disgusting as it sounds!
1 | | leg of lamb |
2 | cloves | garlic, slivered |
1 | | onion, chopped |
4 to 6 | | figs |
1 | cup | chicken stock |
1/2 | teaspoon | ground ginger |
- Stud the leg of lamb with the garlic.
- Scatter the onion over the base of a roasting dish and place the lamb on top.
- Roast in the usual way.
- Half an hour before it's cooked, add the figs.
- When cooked, remove the lamb and keep warm (not you, the lamb).
- Bring the pan juices to a boil and add stock, ginger, and seasoning and simmer for 5 minutes or so.
- Mash the figs into the sauce.
- Then slice the lamb and serve with the sauce.
