Bushunter's Beef OR Turkey Jerky

I've experimented with this to get it just right for my taste. I try not to make more than 10 lbs at a time as this causes pain in my jaw trying to chew that much!(G) Really, get about a three lb. roast. I select a bottom round roast with as little fat as I can find, then have the butcher remove the rest of any fat that remains, have him slice it into 1/4 in. thick pieces, across the grain if possible, with the grain makes for chewy jerky. I use a plastic bowl to mix the following ingredients and use the same bowl for marinating the beef in the refrigerator for 24 hours.

This stuff will send your taste buds into orbit! I had the Deli department. slice 1 1/2 lbs. of processed turkey breast into 1/4 in. thick slices and marinate them the same way I did the beef although the marinade recipe is different.
