Chutney might be hard to find. I make it from either peach or apricot jam mixed with curry powder and vinegar until it tastes right. That isn't the real thing, but it isn't bad.
There are a lot of recipes for Babooti that are considerably more elaborate than this one, however, this is easy to do, which counts with me!
Babooti is a favorite dish of the South African Boer People.
1 | lb | Ground beef |
1 | thick slice | Stale bread soaked in milk |
1 1/2 | tbsp | Apricot jam |
1 | tbsp | Mild curry powder |
1 | biggish | Onion, sliced fine |
1 | Egg |
Fry the onions until golden. Add curry powder, jam, beaten egg, bread and about 1/2 cup of milk. Add to meat and mix thoroughly. Put it in a small bread pan and bake for about an hour at 350 degrees. Towards the end baste several times with some beaten egg and milk. Sprinkle with coconut and brown it a bit.
Serve with rice and chutney.
