Can use halibut, mahi mahi, or whitefish in place of Sole
2 | lb. | Salmon, cut into 1/2 strips |
2 | lb. | Sole, cut into 1/2 strips |
2 | Fennel Bulbs, julienned | |
1 | Papaya, peeled, sliced | |
1/4 | C. | Mint, chopped |
1 | sm. | Onion, julienned |
1 | bunch, Green Onions, Chopped | |
2 | Tbsp. | Parsley, chopped |
1/4 | C. | Orange Juice |
3/4 | C. | Olive Oil |
Salt and Pepper | ||
Red Oak Lettuce or mixed greens |
Weave fish strips together on sheet pan, starting with the corner two strips at right angles. Sprinkle with salt and pepper. Bake in a 350 degree oven for 12-16 minutes or when fish turns opaque. Or grill fish in an oiled fish-grilling basket over a medium heat grill, turning only once after 9 minutes. Combine fennel, papayas, mint and onions with parsley, salt and pepper, orange juice and olive oil. This can be prepared up to one day in advance. To serve, line plate with greens, place fennel mix over the greens, and place woven fish on top. This woven fish is easier than it seems. for an exotic flavor, grill some of the papaya with the fish. Salmon is among the highest yielding Omega-3 fishes, an essential fatty acid with a myriad of health bonuses.
