Salmon Silicon

boned and skinned salmon filet |

salt and pepper |
- Dust salmon with flour and shake off excess.
- Heat olive oil in a pan and lightly brown the salmon on one side. Flip the salmon and add the onions, celery, capers and garlic. Cook very briefly. Add the red wine vinegar and wine and bring to a boil.
- Cover pan and bake 5-10 minutes depending on the thickness of the fillet.
- Remove pan from oven and transfer salmon and vegetables to a warm platter.
- Over low heat swirl the butter into the pan until the sauce thickens, season with salt and pepper. Pour the sauce over the fish and serve.
