Pan Seared Salmon with Dilled and Peppered Sour Cream

- Coat a heavy skillet with Olive Oil over med heat. When hot add the filets skin down. Sprinkle salt and pepper over top.
- Cook about 5-6 minutes until skin is brown. Turn over and cook for 3 minutes or until fish is not glassy. Take off heat and keep warm while making sauce
- Sauce:
- Mix together well: sour cream, lemon juice, dill, green onion and pepper flakes. You can add salt, pepper (dash of garlic if you like).
- Serve the sauce over the salmon.
