Russian Fish Pie. This recipe was brought from Russia by the original settlers. Good hot
or cold

salted or fresh salmon |

good flaky pie crust recipe |
- If you are using salted fish, soak the salmon several days until it does not taste
salty, but is not bland. Remove bones and skin
- If you are using fresh fish, fillet, remove bones and skin, sprinkle with salt
- Cook your rice with butter in the water and cool. Do not over cook until dry
- Prepare pie crust. Line a deep pie pan with the crust
- Place a layer of rice on the crust; next place a layer of salmon; then a layer of onions
slices (be generous with these). Sprinkle with pepper. Top with another layer of rice
- Press this all down solidly
- Place top crust on the pie
- Bake in moderate oven until golden brown, but not less than one hour
- You may serve with ketchup and is good hot or cold
