Oven Fried Trout

milk |

Italian bread crumbs |

grated Parmesan cheese |

- Clean the trout; it is preferable to debone, but leave fish intact
- Mix the butter with the onion. Divide evenly and place inside each fish
- Beat the egg with the milk and salt
- In a separate dish, mix the crumbs with the cheese
- Dip trout into the egg mixture, then into the crumb mixture
- Place the trout into a buttered baking pan. Dot each fish with a teaspoon of butter
- Bake fish at 400° F. just until done. Watch carefully to prevent scorching
- Fish may also be fried in oil on the stove top
