New England Fisherman's Skillet

Firm white fish (such as halibut, snapper or cod ) |
- Brown potatoes and onion in oil over medium-high heat in large skillet, stirring
occasionally.
- Stir in celery, garlic and thyme; cook 4 minutes. Add tomatoes; bring to boil. Cook 4
minutes or until thickened.
- Add fish; cover and cook over medium heat 5 to 8 minutes or until fish flakes easily
with fork.
- Garnish with lemon wedges and chopped parsley, if desired.
- Servings: 4
