One of the best ways to provide a nice serving of Lobster, within reasonable cost.
1/2 | tsp. | Salt |
1/4 | tsp. | pepper |
2 | Tbsp. | Butter |
1 | med. | Onion, chopped fine |
2 | med. | Lobster, cooked or 1 14oz can frozen lobster meat |
1/4 | c. | Buter |
2 | c. | Potatoes, diced |
1 | tsp. | Salt |
2 | c. | Boiling Water |
2 | c. | Milk |
Cut lobster meat in chunks. In a saucepan, melt butter, add lobster and cook until pink, add salt and pepper. In another pan, melt the 2 tablespoons of butter. Add onion and cook until transparent. Stir in the raw diced potatoes, 1 tsp. salt and 2 c. boiling water, simmer for 5 minutes. Stir in the cooked lobster and 2 c. whole milk. Heat thorougly, but DO NOT boil. Add soda crackers in soup bowls if desired. Makes 4 - 5 servings.
