Grapefruit and Gingered Scallops

Grapefruit juice with Pulp |

Grapefruit zest |
1 1/2 |
tsp. |
Ginger (preferably ground) |
1/4 |
C. |
Fruity White Wine |

Tbsp. |
Butter |

Salt and Pepper to taste |
- Sauté scallops in butter approximately 4 min.
- Remove scallops and place on a platter.
- In small mixing bowl, whisk together ginger, juice and wine.
- Add the juice mixture to remaining butter in pan.
- Salt and pepper to taste.
- Bring sauce to a brisk simmer and add scallops. Cook approximately 1 minute. Serve
immediately.
