Flounder with Shrimp Sauce

  • Sprinkle flounder fillets with lemon juice. Season with salt and black pepper. Dip in flour, shaking off excess.
  • Mix egg with fork. Dip floured fish first into the egg, then into the bread crumbs. Place fish on waxed paper and set aside.
  • Meanwhile, make the Shrimp Sauce. Combine shrimp in bowl with mayonnaise, chili sauce, curry powder and sherry. Mix well. Taste and add a little salt and pepper if necessary.
  • In heavy skillet heat the oil. When hot, add fish a few at a time. Cook over medium heat for 3 minutes on each side.
  • Serve on warm plate, garnished with dill or parsley and lemon wedges, with Shrimp Sauce on the side.
