Rolled Bacon-Cheese Omelet

crisp bacon (crumbled)

sharp cheddar cheese (grated)
Line a 10 x 15 x 1 pan with foil. Generously grease the foil with cooking spray.
Mix together flour, milk, melted butter and eggs until smooth and pour into pan.
Sprinkle the crumbled bacon over the top.
Bake in 350 degree oven until the eggs are set (about 15 minutes).
Remove from oven and sprinkle cheese over the top and turn oven off.
Starting at the end of pan, roll the omelet up (like a jelly roll) in the foil and return to warm oven for a few minutes to melt the cheese.
When ready to serve, cut in 1 to l-1/2 inch slices and place on warm platter.
Serve with hot biscuits or toast and your favorite jam or jelly.
