Pumpkin Waffles

Pumpkin Waffles |
2 | | Eggs |
1 | C | Milk |
1 3/4 | C | Bisquick baking mix |
1/2 | tsp | Cinnamon |
1/2 | tsp | Nutmeg |
1/4 | C | Salad oil |
1/2 | C | Cooked pumpkin |
2 | tbsp | Sugar |
1/4 | tsp | Ginger |
- Beat eggs in small mixing bowl on high speed for five minutes or
until thick and lemon colored. Stir in remaining ingredients.
- Cook and serve with Cider Syrup.
Cider Syrup |
1 | C | Sugar |
1/2 | tsp | Pumpkin pie spice |
2 | tbsp | Lemon juice |
2 | tbsp | Cornstarch |
2 | C | Apple cider |
1/4 | C | Butter or margarine |
- Mix sugar, cornstarch and spice in saucepan. Stir in cider and
juice. Cook, stirring constantly, until mixture thickens and boil one
minute. Remove from heat and blend in butter.
