Potato Torta

Comments: Combination of many ideas worked out by myself.
- Preheat oven to 375°.
- Spray 10"diamter french white round with fat free food release spray.
- Chop a combination of red, green, yellow sweet peppers into roughly1/2" dice. Also chop either 1/3 cup mild onions or
1/2 cup chopped chives. If using onions, sauté until clear but not brown in just a coating of spray.
- Mix the above with 1/2 bag of shredded hash brown potatoes (thawed). Add 1 cup shredded cojack cheese or a mixture of
cheddar and other favorite cheeses. Place this mixture in prepared casserole. Pour over 1 carton (pint size)or 2 cups
of egg substitute that has been mixed with 1 tsp.salt and 1/2 tsp. pepper.
- Bake at least 45 minutes or up to 1 hr + 15 minutes. Check the torta with a clean knife as if it was a custard. When the knife is clean within 1 inch of center remove from oven and let stand.
Serve a salad, some fruit, and a muffin for a brunch.
