Poached Eggs with Cheese Sauce

2 | tbsp | Butter |
1 | tbsp | Flour |
| | Salt |
| | Pepper |
1 | | Pimento, chopped |
2 | C | Scalded milk |
1 | C | Grated cheese |
6 | | Slices toast |
6 | | Poached eggs |
- Melt butter in double boilder. Blend in flour, salt, pepper and pimento.
- Add milk and cook until thickened, stirring constantly. Add cheese and stir until melted.
- Pour sauce over hot toast and place a poached egg on sauce.
- Garnish with sliced pimento and a dash of paprika.
Serves 6.
