Pancakes for One

All-purpose flour

Wheat germ

Baking soda

Baking powder
1/4
tsp
Salt

Egg
1/2
C
Buttermilk
1½
tsp
Vegetable oil
Butter & maple syrup
In a bowl, combine flour, wheat germ, baking soda, baking powder and salt.
In another bowl, beat egg; add buttermilk and oil. Stir into dry ingredients just until blended.
Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown.
Serve with butter and syrup.
Yield: 1 serving (3 pancakes).
