Italian Eggs

One of our readers, Karla Stacey, sent me this recipe recently. I tried it last weekend and
found a different and absolutely delicious way to scramble eggs. This wonderful recipe has a
permanent place among my favorite ways to scramble eggs.
8 | large | eggs |
1 | Tbsp | water

1 | Tbsp | sour cream |
3/4 | cup | Mozzarella Cheese, grated |
2-3 | leaves | fresh basil, rough chopped |
1/2 | large | tomato, chopped |
1 | Tbsp | onion, chopped |
5 | slices | pepperoni, chopped into small pieces (optional) |
2 | Tbsp | butter |
- Beat the eggs in a mixing bowl, then add sour cream, basil, pepperoni and water and mix
well.
- Melt the butter and saute onions until transparent, then add the tomato and saute about
a minute longer, then add to the egg mixture.
- Scramble over low heat until eggs are done.
- Serves 4
- Note: When chopping basil, lay leaves on top of each other and roll them up together and
chop. Then give the basil another chop or two in the other direction for a finer texture.
