Indian Curried Omelette

It is my own recipe, one that my husband has grown to love...and demand!

You need to use a non stick pan for this omelette.

Heat the oil and fry the onion till golden brown. Beat the eggs adding salt and pepper. Reduce the heat by half and add the eggs over the onions to cover the pan. Quickly sprinkle the curry powder, then tomatoes and finally the cilantro. Cook for a minute or so till the omelette is firm enough on one side to flip over.
