Ham Strata

This recipe needs to be made the day before. It is very easy to double. A 30" oven will accommodate two 9 x 12 baking dishes at a time. When you need to feed a large group of people it is really helpful to have a good part of breakfast ready when you get to the kitchen. All you will need to do is make a big bowl of fresh fruit and some cheese grits and you are ready to feed an army in no time. Kids really like this strata, too.
3 | cups | cooked ham, cubed |
20 | slices | crustless white sandwich bread |
6 | large | eggs |
3 | cups | milk |
10 | oz | Swiss cheese, shredded |
10 | oz | sharp Cheddar cheese, shredded |
1/2 | tsp | onion powder |
1/2 | tsp | dry mustard |
3 | cups | corn flake crumbs, finely crushed |
1/2 | cup | butter, melted |
Directions:
Cut crusts from bread slices and cut the slices in halves.
Spray a 9x13 inch casserole dish with Pam.
Arrange a layer of bread in bottom of dish.
Arrange 1/2 of the ham on top of bread, and sprinkle with 1/2 of
the combined cheeses.
Repeat layers.
Combine eggs, seasonings, and milk.
Pour over layers, cover, and refrigerate overnight.
Next morning:
Preheat oven to 350° F.
Mix cornflake crumbs & melted butter.
Sprinkle over the strata, and bake 30 minutes covered. Remove from oven and sprinkle on remaining cheeses.
Bake 10 minutes longer uncovered, or until cheese is melted and bubbling and the top is starting to brown (Watch it because ovens vary a lot). It is done when a knife inserted in the middle comes out clean.
Let stand 10 minutes before cutting into serving size squares. Serves 12.

This recipe should be made the day before you plan to serve it.
