French Omelet and Bacon Breakfast

4 | slices | Bacon |
2 | tbsp | Chopped onion |
1 | tbsp | Chopped green pepper |
1 | tbsp | Butter |
2 | | Eggs |
1 | tbsp | Milk |
1/2 | C | Cheddar cheese |
- Preheat griddle on medium heat.
- Place 2 bacon slices along each long edge of griddle. Cook bacon 5 to 6 minutes, or until brown and crisp. Turn after half the time.
- While bacon cooks, sauté onion and green pepper in butter until tender-crisp. Remove vegetables from griddle. Set aside.
- In small bowl beat eggs and milk together. Slowly pour egg mixture down center of griddle. Spread egg mixture quickly to form rectangle. Cook eggs 1 to2 minutes, or until almost set. Sprinkle onion, green pepper and cheese over top of eggs. With pancake turner, gently roll up omelet. Remove from griddle. Cut in half.
- Serve omelet with bacon.
