Canadian bacon, grilled

Extra crisp English muffins

Marchand de Vin Sauce (See Sauce Chapter)

Tomato, grilled

Poached eggs

Hollandaise Sauce
On a dinner plate, lay slices of Canadian bacon on 2 extra crisp English muffins. Then cover each with Marchand de Vin Sauce. Top each English muffin with a poached egg and top with the Hollandaise Sauce. Garnish with grilled tomato.
